Why is teaching the Quran mentioned before creation of humans?

You could see this collection of verses in a few different ways, IMO.
(1) First, don't assume that the verses display a chronological order. In saying God has taught the Qur'an (552) before creating man (553), He is showing the power or importance of the message(s) of Qur'an - they go beyond us mere humans. (If you do want to understand these verses in a chronological order - Remember how much animals are mentioned in Qur'an. They existed before humans.)
(2) The Qur'an is not just a book. I can't remember the exact verse(s), but it doesn't just have the physical form that we own. It governs everything. Even if someone has not heard of Qur'an or does not believe that Qur'an carries a good message, that doesn't necessarily mean that they're not following it. The statement "He has taught the Qur'an" (552) even devalues a certain prophet or messenger in an individual's life - their specific teachings don't need to be followed, because God is the sole Teacher and anyone can be guided with His will and guidance. No need for a physical book or religion.

- How can someone follow Quran when not knowing that it exists? How about praying, zakat and fasting? How can someone follow Quran when he or she never read it?
I really would like the verse where i can read that animals were created before humans, i did not read such verse or i might have overlooked it.

My point is that God is the Supreme and only Teacher. If God wills to guide someone, He doesn't necessarily need to guide them to a physical book.
IMO the Qur'an speaks primarily of believing in God, understanding and being mindful of the fact that He is the One in control of it all, and making the right choices (such as being a good and helpful person, and staying away from evil and major sins).
Also your question about prayer, zakat and fasting goes into the whole "muslim vs mumin" debate. I am just talking about being a muslim here; not a mumin.

To my knowledge there is no such verse in Qur'an that says animals were created before humans. I said that because if you accept the theory of evolution, you accept that animals were here first. I believe the Bible story of creationism accepts that animals were here before Adam as well.
